Betty Crocker Vegan Chocolate Cake

So one night my family and I were craving something sweet and so I found a cake mix we had which was accidentally vegan. It was Betty Crocker Super Moist Chocolate Cake. I figured I'd experiment and it was absolutely amazing !!




Ingredients:

  • 1 Dry Cake Mix (Betty Crocker Super Moist Chocolate Cake Mix)

  • 1 3/4 Water (I didn't use vegetable oil because I couldn't find any but it turned out surprisingly the same.)

  • 1/2 cup Unsweetened Applesauce (It called for 3 eggs but this worked perfectly.)





Cooking time: 35-45 min.

You can go by your box on cooking times, it depends on what pan you use. You should cook it 5 min. longer than the box says.

Hope you love it :) I thought the Betty Crocker vegan chocolate cake was amazing, especially considering how easy and light on calories it was.

Cornbread

That sounds yummy. And the cake makes me think of cornbread. I'm a Southern girl and love cornbread. I don't know if Martha White Plain Corn Meal is sold everywhere, but it is in Tennessee.

These bags have a Southern Country Cornbread recipe on the back. The bread is SOOO good.
-Instead of one egg I use 1/4 cup sugar free apple sauce.
-Instead of 1 1/3 cup milk I use 1 1/3 cup almond milk.
-For 1/4 cup vegetable oil I use 1/4 cup Earth Balance Buttery Spread. (This tastes better than butter to me, but it's an oil blend of mostly palm, canola and soy.)

Then 2 cups meal, 1 Tbsp baking soda and 1/2 tsp salt. The actual recipe says 1 tsp salt but that's too much for me. Cook in heated/greased skillet at 450 degrees for 20 to 25 minutes in preheated oven. It's SOOO good. And I actually cook at 430 degrees b/c my oven gets too hot.
