Buffalo Seitan Pineapple Submarine Pizzas

I came up with this recipe because I am very indecisive and tend to crave multiple things at once. So I was having a buffalo sauce craving and still wanted something sweet, but satisfying. (That is where the pineapple came in!) I also like to use up everything in my fridge so this recipe worked out well! It's also one of those recipes that can be adapted and is still fast enough to throw together.

If you want to use BBQ sauce instead of buffalo its easily done! If you want to use English muffins instead of a baguette, just play with the cooking times. If you don't like onions no worries, leave them off or try bell peppers! If you want a "cheesy" aspect, sprinkle nutritional yeast before or after cooking! Or if you find an awesome vegan ranch dressing, drizzle a bit of that on after cooking!

The possibilities are endless, but the best recipes are the ones that leave you stress free AND satisfied in the end!

Ingredients:

1 Whole wheat baguette
1/2 cup of tomato sauce
1/2 cup of cubed pineapple
1/2 cup of diced red onion
1/2 cup of diced Buffalo marinated Seitan
Sprinkle of dried Basil

For the Buffalo Marinated Seitan
1/4 cup of your favorite hot sauce
2 Tablespoons of melted earth balance
Mix the Hot sauce and earth balance together. Marinate diced Seitan for 15 minutes or longer depending on the heat intensity of your choice.

Directions:

For the Pizza
Preheat the oven at 400°F.

Cut the baguette in half then slice the halves lengthwise so there are 4 submarine looking slices. Bake bread for about 3 minutes (just to give it an extra crunch).

Let bread cool then spread tomato sauce as thick as you'd like on the bread slices. (Use less tomato sauce if you want more of a buffalo flavor or add some Buffalo sauce to the tomato sauce!)

Add Onions, pineapple, and Buffalo Seitan according to your tastes. Sprinkle with Basil. Bake for about 10 minutes and enjoy!

was okay. not terrible. wasn't the biggest fan of the pineapple so I guess I could try that without. good idea on adding earth balance to hot sauce.

I had some of this stuff hanging around and I threw it all together and it was actually really good. not too spicy and not too sweet! I think I'm gonna try bbq next time too!
