Chocolate Applesauce Cupcakes

2 c. flour

1/3 c. unsweetened cocoa powder
1 c. sugar
1 T. cornstarch
2 t. baking soda
1/2 t. salt
1 3/4 c. applesauce
1/4 c. canola oil

Mix dry ingredients in large bowl. Add wet ingredients and mix til just blended.

Fill 12 cup muffin tin sprayed with oil with batter. Bake 325°F 30 minutes or until toothpick comes out clean.

Makes 12.

I'm glad you like this recipe!!I also love how simple they are to make since the ingredients are very basic. I must say they taste especially good with chocolate frosting!

Delicious Vegan Chocolate Cupcakes

Kelly,
This is a great, simple, healthy recipe for chocolate cupcakes. I love that it uses applesauce and that you don't have to mess with egg replacers. One of the things I learned from Vegan Cupcakes Take Over The World is that we don't always need the standard egg replacer to make delicious baked goods. This is a great example of that! I'm sure you stun plenty of people by serving these vegan cupcakes.
