Coconut Butter Spread

We have been vegan for some time now and are 70 years old and feel great. We live at 10,000 feet & no problems at all. It's an amazing way to live and we love the food. We made the Swiss Chard and white bean soup and can't get enough.


I have a question. I've been reading about the health benefits of coconuts. I found some canned coconut milk and have heard one can make a coconut butter spread from it. I can't seem to find a recipe. I would like to lose the "I Can't Believe It's Not Butter". Seems like substituting coconut milk or oil would be a very good thing to do.

Do you know how make coconut butter spread?

I did mix a bit of peanut butter with the milk and put it on bread with a bit of jam. It tasted just like a PB&J. Again I'm amazed.

There are many documents on the internet, in the library, and on you tube that lays out the absolute benefits of coconut oil to the human body. Sure coconut has fat but it's a good fat that raises your good cholesterol and lowers the bad cholesterol, and that is just the beginning. To start with, view this video and from there google Dr Mary Newton and you will begin a trail that will enlighten and excite you.

Coconut Butter Spread

I just love the taste of "I Can't Believe It's Not Butter". Is there anything vegan that does taste like this? Is there a way to reproduce this taste that is vegan & safe?

By the way 90% & 40% add up to more than 100%

Beware of cononut oil!

Coconut oil is extremely rich in saturated fat - almost 90%. About half of it is composed of medium-chain fatty acids, which are not atherogenic, but that still leaves more than 40% as atherogenic long-chain fatty acid. That's definitely unhealthy.

Coconut Butter

There are manufacturers of coconut butter spread. But, I just allow virgin coconut oil to solidify at room temperature and spread it on bread instead of using butter or margarine. It will solidify below 76 degrees Fahrenheit (Room Temperature) and can easily melt above that temperature. If your average room temperature is above 76 F, just put it in the refrigerator until you are ready to use it.
