Easy vegan chili

This easy vegan chili for bachelors is one of my favorites meals to cook in a hurry. If you keep a selection of beans and tomatoes on hand and are in a pinch, this is one of the easiest ways to get a meal cooking that will be ready when you get home. The flavor will intensify the longer this cooks, but if you had to have it in a hurry, you could put it in a soup pot, bring to a boil, and then reduce to low and cook for about 45 minutes - an hour. You can use any combination of beans you like best.


Ingredients:

  • Two large cans chili beans (pinto, or whatever you prefer)
  • Two large cans diced tomatoes (petite diced is better)
  • One bag Morningstar Farms Griller Crumbles
  • 1-1/2 Tbsp. ground cumin
  • 1-1/2 Tbsp. chili powder (or to taste)


Directions:

Dump everything into a crock pot, stir it together and turn it on low. Cook over night or during work for about eight hours.

Garnish with tortilla chips, spaghetti, or serve over a salad or vegan hotdog. Enjoy!

Morningstar Crumbles

Hi,

Just wondering about the chili recipe that was posted today. Is the Morningstar Crumbles actually considered vegan? Doesn't it have egg product in it? I'm not for certain, I'd have to read the ingredients again but I know most of the Morningstar "meat" substitutes have egg in them. The only patties I've seen that are truly vegan are the Morningstar Vegan Grillers. Anyway, just thought I'd ask.
