Raw Chocolate Chip Cookies

I love these quick and easy vegan cookies. They feel almost sinful, even though they are so healthy!


Ingredients:

2 ½ cups raw walnuts
12 medjool dates
3/4 tsp cinnamon
½ tsp salt
1 ½ tablespoon softened raw coconut oil
2 tablespoons cacao nibs

Directions:

Blend dates in food processor until very smooth, then add everything else except the cacao nibs and blend until smooth. Once the rest is combined, throw in the cacao and blend just until the nibs are mixed in (not smooth.)

Scoop out the mixture and shape with your hands into cookie shapes. Refrigerate for an hour before eating. It makes about a dozen cookies.
