Tofu Scramble Without Pressing

by Nia
(NYC)

I don't have patience for "pressing" tofu! If I use a particularly water saturated tofu this is what I do.

Tofu Scramble

*Tofu (However much you think you can eat)
*Vegetables to your taste (I like sparse amounts of onions, pepers and mushrooms)
*Spices to your taste(whatever you like- I like miso, black pepper, indian black salt, turmeric and garlic)
*Texture (Sometimes vegan bacon bits and sunflower seeds- it's up to you)

Start by heating tofu and vegetables (in a pan) until the water/liquid has come out of the tofu and vegetables (if using dried leaves this would be a good time to add them). When you feel all the water/liquid has leached out just remove pan from the heat and pour it off (do whatever you want with the liquid). Add spices and/or whatever else you want and enjoy!
