Butterfly "Wings" Vegan Meyer Lemon-Olive Oil Cake with Apricot, Aprium & Lemon Verbena Preserves, Vanilla Bean Vegan Cream Cheese Frosting, Lemon Fondant and Vanilla Bean Fondant
A four tier Vegan Wedding Cake with all Whole Grain Flour, Extra Virgin Olive Oil and Meyer Lemon Zest and Juice. All flowers and leaves are made of Gum Paste or Crystallized Petals. The butterflies are made entirely of white chocolate.
The cake was designed for Miss Tara Wings if Big Sur, Caifornia so the design was to be based on the wildflowers of Big Sur and the butterflies are to represent the name of the bride.

I love meyer lemons; their flavor is like a combination of oranges and lemons, not quite as tart as regular lemons, and oh so juicy. I also love the use of olive oil in cake. People worry that it will give the cake a savory flavor, but using good quality extra virgin olive oil will provide moisture and only the faintest hint of flavor, once baked.
I love that you used flavored fondant to go along with your buttercream. And, of course, this vegan lemon wedding cake is absolutely gorgeous!
