Veganism reverses inflammation

Besides seeing all the videos about the treatment of animals on factory farms and all the reports about the huge increase in fat amounts in meats and all the reports about the antibiotics in meats. I am a vegan because it seems to reverse the inflamation caused by eating meats, dairy, white flour and white sugar. It seems to take awhile but it works.

Then another reason is I'm old and tend to gain weight just thinking about food. Eating vegan has dropped my weight to a size 8 and I haven't been that small since high school. At least I look good from the neck down. The meals and recipes are astounding delicious and a treat to have new things to eat and new tastes.

My next project is to grow vegetables from vintage or heirloom seeds and get the tastes that my grandparents enjoyed. I ate some green beans at an Amish Restaurant and couldn't believe the taste. I keep wishing I could go back and get some more. They were bare and steamed without any seasoning and I will NEVER forget them.

Not only has the quality of meat changed for the worse but the nutrition in vegetables and fruits has changed. I learned from a program called Eating, that you have to eat three apples to get the nutrition from the one that Grandma and Grandpa ate.

I will never go back to eating something that will make me ill.
