What to do with Almond Okara?

by Nancy
(Draper, UT)

Question:

I have a soy milk maker and I am thinking of making almond milk instead of soy milk and then I'll have almond okara pulp left over, which (to me) would be much worse to throw away than the soy okara (which I have been doing for years and feeling slightly guilty about).

I think I'm over analyzing this, but do you have any ideas/suggestions?

Answer:
Great question! I've seen numerous recipes on the internet for soy okara over the years, and I also know that many people decide to compost their okara to avoid simply wasting it.

I don't know that I've seen almond pulp recipes, but I bet one of our readers has, so this is a call to anyone who might have ideas on what to do with the almond pulp leftover from making almond milk... Ideas on what to do with almond okara, please?

Try adding it to cookies, pancakes, bread or add it to cereal. It should taste yummy!
