Maxing out on Summer Vegan Food

Summer has always been my favorite time of year- I love the heat, the long days, the flowers and leaves and trees, and most of all, the summer fruits and vegetables. There's simply no other season with the bounty of produce like the summer tomatoes, peppers corn, berries, peaches, cherries, and plums.

After a dinner of a creamy cashew pesto pasta with white beans, zucchini cakes, fresh bicolor corn, and finished off with two types of cherries and blueberries for dessert, I knew I had to send you a quick list of my favorite summer recipes.
