This is my mom's recipe, and it's one of her best!
1 lb lentils, sorted and rinsed
2 med onions (or 1 large)
2-3 ribs celery, minced
2 carrots, diced
1/2 cup tomato sauce
1/4 cup tomato paste
3 Tbsp. olive oil
2 clove garlic, minced
1/2 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. salt
1/2 tsp. pepper
Saute onions in 3 Tbsp. olive oil, set aside.
Cover lentils with water, bring to a boil and discard water.
Cover lentils with fresh water, bring to a boil.
Add sauteed onions to lentils.
Add remaining ingredients.
Simmer for 30 minutes.
Serve with either a hearty rye bread or a nice sourdough. Red wine goes well with this tasty soup!
Not only is this meal delicious, it is also economical and good for you. A trifecta!
